A pinch of amchoor powder 1tsp garam masala 1/2 tsp coriander powder 1/2 tsp lemon zest 2 tsp freshly ground black pepper 2 tsp oil to pan fry, salt to taste amaranth flour or breadcrumbs for dusting Boil 2 cups of water add the amaranth stirring well. First, add 1 tsp oil, saute garlic and onion until glossy then add the red pepper and zucchini, and stir fry for 2-3 minutes. Then add the lemon zest to all masalas, stir fry for 2-3 minutes.
